CALÇOTS..Have you ever tried?

It’s one of the typical dishes of Catalan cuisine consisting of onions accompanied with the salsa romesco (special sauce). We can enjoy eating this traditional dish until the late March or early April.


In Catalan language Calcots means onion and this type of onion is a spring onion. People make ¨calçotada¨ as a barbecue when they grill these onions and complete the main course with meat and typical sausages.
The most traditional way how to eat calcots is with the salsa romesco. It’s a special sauce made for this occasion and here is the recipe if you want to make it.
Salsa Romesco
Ingredients
1 head of garlic, 1 clove of garlic, 100 grams of peeled roasted almonds, toasted hazelnuts 50 grams, 4 or 5 ripe tomatoes, 2 large roasted peppers, a slice of dry bread, vinegar, olive oil and salt
Preparation
Roast tomatoes and garlic head, when they have cooled slightly, peel both ingredients and put them in a bowl, add salt and oil.
Toast the bread slice and once bread is cooled, tear into 6 pieces and add it to the bowl. Cut tomatoes and fry them for 4-5 minutes. Add tomatoes, almonds and hazelnuts into the bowl and mix all ingredients. Place all ingredients into the processor and process until ingredients are a thick puree.
While processor is running, slowly add oil and vinegar. Add salt to taste.
You can make this sauce to accompany meat, fish or anything you like.
